Fancy-ish Pizza

Just like most modern families mine is super busy. Both myself and my husband work full time jobs, we commute, we maintain a house, we are raising a tiny human, we are taking care of several critters and sometimes we sleep or have us time in between that. In order to fuel our chaotic lives we all need food.

And on top of being busy our whole family suffers from getting hangry. I get hangry, my husband gets hangry and our little wild one gets hangry. Therefore, I am always looking for quick eats options. Some nights it's take out or dining it. However, that gets expensive and unhealthy. On top of that I work late so on the days I work it is not really a feasible option. On the nights I work I am looking for simple, quick and healthy recipes to fuel my family.

One such meal was inspired by our wedding. My husband and I got married on a Mediterranean cruise. A couple of our port stops were in Italy and we had lite but delicious pizza. I wanted to come up with my own quick and fun spin on healthy version of pizza. You will need: naan bread, rotisserie chicken, arugula, goat cheese, cherry tomatoes, minced garlic, balsamic vinegar and olive oil. This meal will take about five minutes to prep and about ten minutes to cook for a total of fifteen minutes. This is doable for any family.




First, preheat your oven to 400. While the oven is preheating take out your naan and place it on a baking sheet. Next, spread a light layer of olive oil on top of the naan. Afterwards, sprinkle 1 teaspoon of minced garlic around on each naan.



 Now it's time to build your delicious pizza! I shred pieces of rotisserie chicken in my hands and spread it out on the naan. The chicken is really filling so I like to use a lot. Next, I quarter my cherry tomatoes and place them on my pizza. Again, I like my pizzas loaded with toppings so I use a lot. Lastly I sprinkle a generous amount of goat cheese on each of the naan. This tangy cheese will really pop against the sweet tomatoes and it elevates the pizza and makes it "fancy" pizza. 


When you've got your pizza loaded up to your liking pop it in the oven for 7-10 minutes. Once the tomatoes look blistered and the bottom of the naan is a golden brown your pizza is done in the oven. Take them off the baking rack and let them cool for a couple of minutes. Then, add a heaping moundful (it's a scientific measurement term...I promise) of arugula. It will flatten and will hold up to the richness provided in the cheese and the chicken. Afterwards, lightly spritz your pizza with balsamic vinegar. This will cut thru the bitterness of the greens and pair well with the cheese. Lastly enjoy your seemingly fancy but simply, easy and healthy dinner!
